We have used one of the Freetype Fields on the stock analysis tab to get around this issue. We enter the word HIDDEN into a Freetype Field. You can then create your own filter to exclude all Inactive items AND exclude all items flagged as HIDDEN in the specified Freetype Field.
You cannot mark a Stock Item "Inactive" if it has a BoM associated with it. It would be very useful to either override this restriction or implement the requested feature of being able to make a stock item hidden.

Inactive items would need to be filtered from the list view, whereas hidden wouldn't.
As Geoff points out the inactive functionality is currently available in product, can you provide more details on what you are looking for?
You can make stock items inactive which hides them from a lot of lookups (eg order entry)
