More and more now, I'm finding that we are having requests for statements to be sent to multiple addresses. I can set up a reminder to do this manually but it would be wonderful if there was a setting for this.

No i think Send statement to can only be assigned to one person. We currently use a workaround by entering 2 emails in the email box with a ';' but it does't always work.
More than one email address can be set up in contacts already. You just need to assign the Send Statements To role to the contact.
